Stir-fry Smoked Beef

Actually, I really do not know how to consume the thing that we call smoked beef. I bought a year ago and kept in the freezer (it's frozen type anyway), and need to be cleared before its expired.

Some says put in the sandwich will be nice or just eat like that... emmm... cannot take lorrr... I am thinking of my typical Malay dish... Lemak Cili Api. Oppsss!!! No! No! No! No santan (coconut milk) pleaasssseeeee... Food for dinner must be simple, easy peasy to cook and finish immediately...

Taraaaaaaaaaaaaaaaaaaaa...
400 gm sliced smoke beef - cut to small pieces
2 tbsps blended onion
2 tsps blended garlic
1 inch ginger - finely chopped
2 red chillies - sliced
1 green chillies - sliced
6 cili padi (the hotter the better... hehehe) - sliced
1 big onion - sliced
1 big tomato - wedged
1/2 lemon
salt to taste
cooking oil

Let's do it my way...

Heat cooking oil in a pan. Stir fry the onion, garlic and ginger until fragrant. Add in the cili padi and the smoked beef. Mix well bring to cook until the water dissolve.
Add in the sliced onion, chillies and tomato. Season with salt and squeeze in lemon juice. Off the heat when the onion become soft.
Serve with hot plain rice. ;)

Fried Screws

hahaha... sounds 'brutal' isn't it? Just for fun only... I am no Italiano, very hard for me to remember the name of this 'screw type' pasta. Panggil skru jer la... hahahaha... My family likes pasta but need to prepare in Malaysian (that's me... :D) ways to suit the tastebuds... hot and spicy... campur itu campur ini, whats in the fridge that suit to this, all dump in. Let's layanzzzz...


500 g 'screw' pasta - boil to cook
3 tablespoons blended onion
3 teaspoons blended garlic
4 tablespoons blended chillies (lessen or more)
100 g chicken meat - cubed
1 carrot - grated coarsely
50 g cabbage - sliced
100 g fish cake - sliced
100 g fish ball - quartered
1/2 cup frozen mixed vege
1/2 lemon
salt and sugar to taste
cooking oil
chopped scallion and chinese parsley for garnishing

Heat oil in a wok. Stir fry blended ingredients till fragrant or someone sneezing...
Dump the chicken meat, bring to half cooked. Add in the fish cake, fish ball, carrot and mixed vege. Stir till well mix.
Add in the pasta and sliced cabbage. Mix them well. Add salt and sugar to taste. Squeeze the lemon juice in and mix well.
Garnish and serve.

Nasi Jagung

arini tahap boring dah melepasi hidung. nak makan pun jadi masalah. pening gak la dok pikir apa nak masak tapi tak mau la sama macam selalu. teringat ada jagung dalam peti es yang kita beli sebelum raya aritu... saja2 jer tak de tujuan tertentu. kelebek sana sini semua cukup... buat nasi jagung jer la... hantam saja, main baling2 gitu... yok kita layan...

6 cawan beras basmathi - cuci dan toskan
6 cawan air
1 cawan susu cair
2 tongkol jagung - asingkan dr tongkolnya
1 inci halia - mayang halus
1 labu bawang besar - didadu
2 ulas bawang putih - hiris
rempah tumis - bunga lawang, buah pelaga & kayu manis
125 gm minyak sapi (1 tin kecil)
1 cawan sayur campur
1 cawang daging/ayam cincang
1 batang lobak merah parut
2 sudu teh lada putih
garam secukup rasa
  1. Panaskan minyak sapi dalam periuk. Masukkan rempah tumis, bawang besar, bawang putih dan halia (masukkan daun pandan jika ada). Tumis hingga. naik bau.
  2. Masukkan ayam/daging cincang, kacau rata. Kemudian masukkan jagung dan sayur campur.
  3. Masukkan beras dan gaul hingga rata dan sebati. Masukkan air, lada putih, garam dan lobak merah. Gaul.
  4. Alihkan periuk letrik. Biarkan nasi masak hingga hampir kering. Tuangkan susu. Taburkan kismis dan gajus jika mahu. Biarkan nasik tanak dan kering sepenuhnya.
  5. Sedia untuk dihidang.


*Note
Taburkan dengan bawang goreng, daun bawang dan daun sup yg dihiris.
Boleh dihidang bersama ayam masak merah, dalca dan acar.

Nak express kita taksempat buat tu semua... hahahaha... gelojoh... tp arini kita hidang dengan ayam lada hitam xpress... hehehee



Ayam Lada Hitam - express punya...

hahhaha... bukan le niat nak menipu.. tp kes nak cepat... segera... guna perencah pre-mix dari jenama pasaraya gergasi. not bad la rasanya... sbb semua dah ada kat dlm tu. cuma tambah kan bawang besar dan hias daun bawang jer. tp kita suka hati tambahkan cili merah hiris. masak pun ikut jer instruction kat paket tu. siap! makan ngan nasik jagung tadi.

Rendang Raya

rendang ni kita buat masa raya aritu. sedikit kelainan dari biasa sbb kita tak guna santan dan digantikan dengan susu penuh krim. standard la, kalau time raya, nak beli santan sesudu pun kena beratur, kena ambil no... malas la nak buat tu semua, so kita gantikan dengan susu. disamping kemalasan tu, sajian ni boleh la dikira sajian sihat la kan... hahahhaha... dah malas tu sihat gak ker... hehehe... jom layanz...

opps!! lain2 sajian raya sama cam tahun2 lepas... ketupat, sambal goreng, sambal kacang dan bla... bla... bla... semua menu wajib hari raya, kalau nak letak kat sini resipinya cam benda sama... tak best...


2kg daging (lembu/kambing)

250g rempah rendang

4 senduk kecil cili kisar (nak pedas tambah lagi...)

3 senduk kecil bawang kisar

1½ senduk kecil bwg putih kisar

2 sudu besar halia kisar

2" kunyit hidup

lengkuas

6 batang serai - kisar bersama kunyit dan lengkuas

rempah tumis - kayu manis, buah pelaga, bunga lawang

1 liter susu penuh krim

1 senduk kecil kerisik

gula melaka dan garam secukupnya

minyak untuk menumis

hirisan daun kunyit

daun limau purut yang di siat2


Satukan rempah rendang dan bahan kisar.

Panaskan minyak, masukkan rempah tumis hingga wangi dan masukkan semua campuran bahan kisar. Tumis hingga garing dan terbit minyak.

Masukkan daging, susu, kerisik, gula dan garam. Biarkan mendidih. Kacau sekali sekala. Masukkan daun limau purut. Masak hingga kuah pekat.
