Homemade Carrot Noodles In Vege Soup

Dalam cuaca panas begini, dapat makanan jenis berkuah atau sup memang menyegarkan.  Akak pulak memang sup sudah menjadi kegemaran lebih2 lagi dengan keadaan gusi yang sakit agak susah nak mengunyah. Udah jadi macam ulor... main telan jer.  

Kali ini akak guna mee carrot yang akak buat sendiri.  Supnya memang sengaja akak bubuh sayur lebih sebab akak suka sayur.  Cuma ditambah udang dan bebola ikan di dalam sup.  


Sayur2nya dan udang akak celur sebentar dalam air mendidih yang bercampur garam untuk menjaga kesegarannya dan juga untuk mendapatkan stok dan dicampurkan ke dalam sup.

Bahan celur (blanch):
Bunga kobis / cauliflower
lobak merah / carrot 
udang / prawn
jagung muda / baby corn
buncis / french bean
kacang (apa tu ek) / green bean


Bahan Sup / Soups:
Bawang besar - hiris / Onion - sliced
Bawang putih - cincang / garlic - chopped
halia - hiris halus / ginger - thinly sliced
cili api - ketuk / bird chilies - crushed (optional)
bebola ikan / fish ball
air rebusan sayur / vege stock
garam secukupnya / salt to taste
minyak zaiton / olive oil
hirisan kobis / sliced cabbage (optional)

Panaskan minyak dan masukkan bawang besar, bawang putih, cili api dan halia, goreng hingga layu.  Masukkan bebola ikan dan air rebusan.  Biarkan mendidih dan perasakan garamnya.  Masukkan hirisan kobis, reneh sebentar sebelum hidang.

Heat up the oil and add-in onion, garlic, bird chilies and ginger, fry until tender.  Add in fishball and vege stock and bring to boil.  Add in salt to taste.  Add in cabbage if desire and simmer before serve.

Slurppp!!! Emmm... Yummy!!!

Tapi akak mesti nak siram sambal kicap tak kira la sup apa pun... :D

This is my homemade carrot noodles that I eat with the soup....

Carrot Noodles
500 gm flour
200 ml carrot juice
1 tsp salt

Sift flour into a mixing bowl and make a well in the centre. Combine carrot juice with salt and pour into the centre of the flour. Bind mixture together to form a very stiff dough. Knead until well combined and smooth.

Divide dough into small portions. Roll out the dough on a lightly floured surface until it is thin enough to be passed through a noodle machine.  Adjust knob of the noodle machine so that the rollers are at the widest setting to feed the dough. Insert a piece of dough and keep passing dough through the machine, decreasing roller spacing each time until you get the thickness that you desire.

Next, pass the dough sheet through the cutting setting to make strands. Repeat the procedure with the remaining dough. 

Remove the strands of noodles and dump in boiling water for 2-3 minutes or take them out when the noodles start floating.  Pour some oil and mix well during hot.  Store in container after cooling process.
