Fried Speghetti & Crunchy Bittergout

I prepared simple lunch for the family today. Only 3 of us at home as Mat Rock is outstationed and will be back later in the evening. Ok... here comes my Speghetti on my style and taste... (malay taste... you know la horr... must hot! hot! hot!) but uses very simple ingredients. hehehe... that's what I found in my fridge.

Fried Speghetti
250 gm speghetti - cooked in salted boiling water
1 tbsp chili paste
1 big onion - chopped
3 cloves garlic - crushed and chopped
1/2 inch young ginger - thinly sliced
3 tbsps sliced button mushroom
1 pc carrot - grated
2 pcs fishcake - sliced
8 pcs fish ball - halved
2 tsps lemon juice
salt to taste
cooking oil (I prefer olive oil)

Heat oil in a pan. Saute garlic, onion and ginger till tender, add in chili paste. Stir well.
Add in fishcake, fishball and mushroom, stir till well covered. Add in grated carrot.
Season with salt and lemon juice then fold in Speghetti. Mix them thoroughly.
Ready to serve.




Here's another dish I prepared Crunchy Bittergout. I tried to do it base on my observation when eating in mamak's restaurant. I did ask sometimes, but never had a good answer.

2 pcs bittergout - washed and thinly sliced
3 tbsbs cornflour
1 tsp pepper
1/2 tsp salt
1 tsp curry powder
1 egg - lightly beaten

Combine all dry ingredients - cornflour, pepper, salt and curry powder.
Dip the bittergout in the beaten egg. Sprinkle with dry mixture.
Deep fry them in very hot cooking oil.

Sotong Briyani


Percubaan terkini untuk rahsia kebahagiaan... Sotong Briyani. Served to Along's friends who came with a birthday cake for her surprise. Yessz!! Today is Along's 16th birthday.

Let's share the recipe tested.

Sotong Briyani

600 gm squids/cuttlefish (any different? just the name, i guess!!!) - cleansed
1/2 onion - thinly sliced
3 cloves garlic - sliced
1 inch ginger - sliced
1 green chili - sliced
3 spoonful briyani paste (briyani powder + water)
3 spoonful plain yoghurt
1/4 cup water
cinnamon stick, star anaise, cardamon
4 tsps cooking oil
salt n sugar to taste

garnish: 1/2 onion - sliced, corriander leaves - chopped

Heat cooking oil, saute the cinnamon stick, star anaise and cardamon util fragrant. Add in onion, garlic, ginger and chili, stir fry until golden brown. Add in briyani paste and yoghurt, stir well.
Fold in squid and stir until all ingredients are well covered. Pour in water and bring to boil.
Season with salt and sugar. Add in the garnishing and let simmer for few minutes.
Ready to serve.

Today's Menu - 3rd June, 2010

Menu yang sempat disediakan untuk family hari ini. Memenuhi permintaan Mat Rock, taugeh masak lemak dan ikan goreng. Masa kat pasar tu saja je beli tauhu lembut walaupun tak tau nak masak macamana, tak pernah buat pun... Idea datang masa memasak, simple jer tapi kuah habis dikerjakan dek Iman...



Masak Lemak Taugeh

50 gm taugeh - bersihkan
2 keping tauhu - potong kecil
3 pokok daun kucai - potong 1" panjang
2 ulas bawang merah - hiris
10 gm ikan bilis
5 butir cili padi (optional)
50 gm santan pekat + air (jadikan 2 cawan)
garam secukup rasa

Masukkan bawang merah, ikan bilis, tauhu, cili padi, garam dan santan ke dalam periuk. Letak di atas api sederhana. Kacau perlahan tanpa henti hingga mendidih supaya santan tidak pecah. Kecilkan api. Masukkan taugeh dan terus kacau sebentar. Masukkan daun kucai dan matikan api.
Sedia untuk dihidang.




Tauhu Lembut Sos Tiram

4 keping tauhu lembut - potong 2, goreng, susun dlm pinggan kuah
2 ulas bawang merah - hiris
1 ulas bawang putih - hiris
4 sudu besar sos tiram
2 cawan air
1 sudu kecil cuka
1 sudu kecil tepung jagung - bancuh dgn sedikit air

hiasan - bawang goreng & hirisan daun bawang atau kuchai

Saute bawang merah dan bawang putih hingga naik bau. Masukkan sos tiram ke dalamnya. Kacau rata. Masukkan air, kacau dan biar mendidih. Masukkan cuka kemudian bancuhan tepung jagung untuk memekatkan kuah.
Siram atas tauhu siap goreng. Taburkan bawang goreng dan hirisan daun bawang/kuchai.
Siap untuk dihidang.




Ikan Selar Goreng

Gaulkan ikan yg telah dibersihkan bersama garam dan kunyit. Goreng hingga masak. Siap.

Nasi Goreng Bilis Telur

Sudah agak lama tiada sebarang entry disini. Sibuk yg bermacam... tak sehat, batuk dan demam datang mengikut musimnya. Dapur pun berasap mengikut musim.

Today is my 2nd day as a jobless person. I start with, as usual, my 'campak2' recipe, Nasi Goreng simple. Thought of doing that for the kids breakfast before they off for school, but my eyes opened a little late... so, this is for their lunch.


Here is the recipe:

Nasi Goreng Bilis Telur
(4-5 persons)

4 plate-full of rice
4 cloves garlic - crushed n chopped
1 bowl fried ikan bilis
1/2 bowl frozen mixed vege
4 eggs - lightly beaten
salt to taste
cooking oil

Heat-up cooking oil in a nonstick pan. Saute garlic till lightly brown.
Add in mixed vege, fry a bit.
Add in ikan bilis and rice. Mix well to cook. Season with salt.
Low the heat, stir in beaten eggs to well covered. Up the heat again, and stir and fold the rice until cooked and dried.
Ready to serve.
