After 'long vacation' of posting entry in this blog, may I begin with this my very own version of Mac and Cheese I baked this afternoon for me and the two children late lunch. Eventhough it was a little bit overbaked but it's perfectly fulfilled to everyone likes.
250 gm pasta - cooked
100 gm chicken filet - cooked n sliced
1/2 cup frozen mix vegetables
30 gm onion - chopped
15 gm garlic - crushed n chopped
1 1/2 tbsps flour
60 ml olive oil
400 ml evaporated creamer
50 gm cheddar cheese - grated
1 tsp salt
100 gm mozarella cheese - grated (can be more or lessen)
Heat up olive oil in a pan and saute chopped onion and garlic until tender. Stir in flour and reduce the heat.
Pour in creamer, stir until bubbling. Add in grated cheddar cheese and stir to melt.
Add the chicken meat, mix vegetables and salt.
Lastly off the heat and fold in the cooked pasta into the cream mixture.
Pour into a casserole dish. Sprinkle with grated mozarella cheese on top.
Bake at 180 degree Celcius for 15 minutes or until the cheese melted.
Serve.
This Mac n Cheese was cooked according to a Malaysian taste - It's my style ;). Happy trying!!!

Cream Crackers Lasagna
I used cream crackers biscuits instead of normal lasagna pasta sheets. It turned out very well to everyone who tasted.
the layers...
Ingredients:
1 pack (330 gm) cream crackers biscuits
Hot water to soak
Mozzarella cheese - grated
Cheddar cheese - grated
A) Red Sauce
400 gm mince meat
200 gm tomato puree
100 gm onion - chopped
20 gm garlic - chopped
1 can sliced mushroom
1 tbsp dried oregano
1 tsp ground black pepper
2 1/2 tsps salt (to taste)
1 tbsp sugar (to taste)
1 cup chopped fresh tomatoes
1/2 cup chopped parsley (I used chinese parsley)
Heat up a pan and put in minced meat. Cook until light brown and half-cooked.
Add in puree, onion and garlic. Stir and simmer until onion become tender.
Add in sliced mushroom, ground black pepper, dried oregano and chopped tomatoes. Simmer.
Season with salt and sugar. Fold in chopped parsley. Off the heat.
Aside.
B) White Sauce
50 gm butter
50 gm flour
250 ml thickenned cream
500 ml full cream milk
150 ml yogurt
1/2 tsp salt
Melt butter in a pan. Stir in flour a little at a time until bubbling. Add in cream, milk and yogurt. Stir well. Simmer until thicken. Season in salt.
Assembling:
Cover 9"x9" baking tin with aluminium foil.
Soak each piece of cream crackers in hot water and layer at the base of the baking tin.
Spread the red sauce on top of the soaked biscuits. Then spread the white sauce.
Place another layer of soaked cream crackers, red sauce and white sauce.
Another layer of soaked cream crackers, red sauce, white sauce and sprinkle the cheeses evenly on top.
Bake in pre-heated oven at 175 degree Celcius for 45 minutes.

Fried Macaroni with Meatballs
Meatball lagi? Iya deknon... lebihan meatball semalam ada lagi. Dapat banyak bebola sebesar guli dari adunan yang akak bagi tu. Cara2 nak buat bebola daging cara akak, resipi ada kat sini.
Jangan marah ye, bila tiba citerasa mat saleh, lidah ngan otak akak pun tergeliat gak... Resipi dalam bahasa omputih... huhuhu... Kellas ke jah???
Fried macaroni with meatball
250 gm macaroni – cooked al dante
1 onion – diced
1 tsp garlic paste
½ tsp crushed black pepper
15 pcs homemade meatballs
1 pc chicken luncheon - julienned (optional)
1 stick celery – sliced
1 cup shredded carrots
5 pcs baby corn – cut as desire
2 tablespoons olive oil
Salt to taste
Heat up olive oil in a pan, sauté the onion to tender, add
black pepper and garlic paste. Stir
well.
Add the meatball, chicken luncheon and celery. Stir and cook 1 minute.
Stir in baby corn.
Fold in the macaroni and shredded carrot. Adjust salt to taste. Turn and stir to mix them well.

Baked Macaroni and Cheese With Meatballs
O.M.K... Oh Mak Kau!!!! Haaaaaaaaaaaaa... ammekkaww!!!
Diam tak diam genap 3 bulan akak tinggalkan 'rumah' ini tanpa peduli... Tak sangka selama itu. Alahai... punyalah tuan rumah ni sibuk bagai terlupa jalan pulang. Sebenarnya tidak la lupa, cuma rasanya kalau posting yang sama tu takut orang tak suka. Kebetulan pula akhir akhir ini, ada sahaja faktor lain yang membelenggu kerajinan akak ber'blog'. Insyallah, selepas ini akak akan cuba aktif bagai dulu.
Meh sini... akak upah resipi 'hantam keromo' akak nih. Akak buat sebagai buah tangan semasa melawat Along di kampus. Kesian dia, kolej cuti 3 hari sempena hari Malaysia tapi dia tak balik. Kebetulan jiran akak yang anaknya sama kolej ngan Along pelawa temankan dia hantar anaknya balik kampus. Emmm... Pucuk dicita ulam yang datang... Dapatlah menjengok Along. Akak memang tak bagi dia balik selalu supaya dia belajar berjimat. Elaun tak dapat lagi, paham2 aje la lepas2 raya nih... Omak dio dah koringgggg!!!
Ok... back to the recipe... oppsss!!! omputih la pulak... Akak buatkan Along 'bake macaroni and cheese' tapi akak tambahkan bebola daging. Homemade meatballs youuuu... Haaaaaaaaa... Kellazzzz... ko... Lagi satu, resepi akak taip dalam omputih... tak tau kenapa tak kuor2 melayunya. Harap2 korang boleh paham ye deknon...
Baked Macaroni n Cheese with Meatballs
250 gm macaroni
A) Meatballs:
250 gm beef meat - minced
½ teaspoon black pepper
½ yellow onion – chopped
1 tbsp flour
B) Sauteed Meatballs:
10-15 pcs meatballs
1 clove garlic – chopped
½ stick celery - diced
½ tsp pepper
Pinch of salt
1 tbsp olive oil
C) Cheese Sauce:
2 tbsps butter/margarine
3 tbsps flour
250 gm thickened cream
2 cups water (keep the water used to boil the meatball and macaroni)
60 gm shredded cheddar cheese
40 gm parmesan cheese
20 gm grated mozzarella cheese
Combine (A) - meat, black pepper and onion into food processor and mince together. Fold in flour and mix well. Shape into small round ball. Drop into boiling water and cook until the ball floating. Take out and aside. (keep the stock to boil the macaroni)
Boil the meatball stock + Olive oil + salt. Fold in macaroni and cook al dante. Strain the macaroni and keep the stock aside.
To prepare ingredients (B) - Heat up olive oil in a pan. Saute onion and garlic to tender. Add in celery, pepper and pinch of salt then fold in the meatballs. Aside.
Prepare (C) - Melt butter and stir in flour. Pour in cream – keep stirring to form smooth mixture. Add in the stock a little at a time and keep on stirring. Mix in cheddar and parmesan cheese. Mix them to well blended sauce.
Slowly fold in the macaroni and sautéed meatballs until all well coated with sauce. Pour into casserole, sprinkle the mozzarella and bake 175 C degrees for 35 minutes.

Chicken Creamy Pasta with Cheesed Broccoli and Cocktail Jelly Punch
Hari ini akak melayan anak tekak akak dengan hidangan ala2 kebaratan kerana berjaya berpuasa penuh sehari. Selerapun apalagi... macam2 dok dalam kepala. Memandangkan segala bahan semuanya boleh dikatakan lengkap, hayun jer la... menu menambahkan kolestrol... hahahahaha... amekkaw!!!
Untuk menu utama akak sediakan pasta bersama sos krim dan ayam dan akak sengaja campakkan jugak kacang buncis yang telah dicelur. Mula asalnya nak buat carbonara, tapi jadi lain pulak sebab tak bubuh telur dalamnya.
Chiken Creamy Pasta
500 gm fusilli pasta – masak ikut arahan di pek
Kacang buncis celur
1 sudu makan olive oil
2 sudu makan mentega
1 bawang besar, cincang/dadu
2 ulas bawang putih, cincang
5 biji cili padi, cincang
400 gm isi ayam cincang
1 st garam
1 st lada hitam
1 cawan stok sayur
½ cawan stok ayam
1 cawan susu cair
250 ml krim pekat (thickened cream)
1 sudu makan parsley kering
40 gm parmesan cheese
Cairkan mentega dan tambahkan olive oil, tumiskan bawang
besar hingga layu. Masukkan bawang putih
dan cili cincang, goreng hingga sedikit kuning, tambahkan isi ayam, masak
selama 1-2 minit.
Masukkan garam, lada hitam, stok sayur, stok ayam, susu dan krim,
biarkan mendidih. Kecilkan api dan renehkan
sehingga kuah sedikit pekat dan masukkan parmesan cheese dan sebatikan.
Gaulkan pasta dan kacang buncis hingga
rata. Sedia untuk dihidang.
Memandangkan stok brokoli dan cauliflower tu banyak, akak buatkan sos cis. Kali ni akak panggang sekejap di dalam oven.
Cheesed Broccoli and Cauliflower
Brokoli – floret
Cauliflower – floret
2 sdm mentega
1 biji bawang besar – dadu
1 ulas bawang putih – cincang
150 ml susu cair
½ sdt serbuk lada hitam
1 sdt garam
½ cawan keju cheddar parut
keju mozzarella – untuk taburan
Cara membuat:
Celurkan brokoli dan cauliflower dalam air yang dididih bersama
sedikit garam dan lada hitam. Ketepikan.
Cairkan mentega, masukkan bawang besar dan bawang putih,
goreng hingga layu. Kemudian masukkan serbuk lada hitam, garam dan susu
cair. Masak hingga mendidih dengan
kepanasan sederhana.
Masukkan keju cheddar dan kacau hingga larut dan menjadi sos
pekat.
Gaulkan brokoli dan cauliflower ke dalam sos.
Angkat dan tuangkan ke dalam bekas tahan panas. Taburkan keju mozzarella di atasnya.
Panggang dalam oven panas hingga keju cair. Angkat dan sedia untuk dihidang.
Bagi menyegarkan anak tekak akak nih, akak buat punch. Buat lebih awal dan simpan dalam peti sejuk beberapa jam. Emmm... nyaman...
Cocktail Jelly Punch
1 liter susu segar
1 tin buah laici
Nata de coco
Fruitty Jellies
Campurkan semua bahan dalam mangkuk dan simpan beberapa jam di dalam peti ais.
Hidang sejuk.

Roasted Chicken and Creamy Fusilli
Semalam ada kawan tayang gambar ayam panggang di FB, ramai sungguh yang tertawan, tak tahan dibuatnya. Dalam keadaan tidak sihat dia taipkan resipi ringkasnya. Apa lagi, akakpun 'projek' terus memandangkan bahan2 utama semua cukup. Nak meroti dan mendonat akak ketepikan dulu...
Selain 'roasted chicken' tu, akak buat Salad yang simple jer bersama Creamy Fusilli untuk melengkapkan hidangan malam ini.
Roasted Chicken Ann
Gaul dan Perapkan:
1/2 ekor ayam
3 sudu makan yogurt
2 sudu kecil minyak zaiton
1 sudu kecil oregano
1/2 sudu makan serbuk lada hitam
1 sudu kecil serbuk jintan
sedikit garam
Taburkan herba campuran ke atas ayam dan balut dengan foil kemudian panggang pada suhu 180 darjah Celcius selama 45 minit. (Ayam akak besor saiznya).
Sementara itu, satukan baby carrot, kacang hijau, capsicum hiris, tomato cherry dan bawang besar dadu, gaul bersama minyak zaiton dan herba campuran (option jer, tak mau tak per). Ketepikan.
Buka foil dan masukkan sayuran yang telah digaul dan diperap dengan minyak zaiton tadi. Masukkan semula ke dalam oven selama 25 minit lagi sehingga sayuran masak/lembut atau ayam sedikit garing. (tapi ayam akak very juicy...)
Siap!!! Nak meratah begitu sahaja pun boleh....
Ni resipi asal yang akak refer, copy dari comment di FB Anns Delight de Patisserie
Sekor ayam, potong la lu sukak besar mana pun dan jangan buang kulit (this is to retain the moisture), aku slalu potong 4 je, pastu marinate ngan yogurt, thyme, salt, black pepper and cumin powder . Pastu letak dalam dulang bakar and drizzle olive oil atas ayam, tutup ngan foil bakar in 180c for 30 minutes, pastu bukak foil and add capsicum (yg dah dipotong dan digaul dengan olive oil) and continue to bake for 15-20 minutes, sampai kulit tu garing sikit and capsicum tu masak. Depending on the size of the chicken nko adjust lah cooking time eh. Tu je.
lagi satu seblum bakar ayam tu kalu ada Mix Italian herbs tu, grind sikit atas ayam tu kalu takde pun takpe. dah tu je.
Salad Simple
Campur dan gaul:
Salad hijau
Salad merah
tomato cherry - belah 4
bawang holland - hiris
capsicum hiris
minyak zaiton
jus lemon
herba campuran
Creamy Fusilli
350 gm pasta fusilli - masak ikut arahan di pek
1 biji bawang besar - cincang
3 ulas bawang putih - cincang
4 sudu besar tepung
5 butir cendawan butang - cincang
5 butir buah zaiton - hiris (tak ada pun tak per)
2 1/2 cawan air (kalau ada stok ayam lebih baik)
1/2 cawan yogurt
garam secukup rasa
4 sudu besar minyak zaiton
Panaskan minyak, tumiskan bawang besar dan bawang putih hingga layu, masukkan cendawan, buah zaiton dan garam. Kemudian masukkan tepung dan kacau rata.
Masukkan air dan kacau selalu hingga mendidih. Matikan api dan masukkan yogurt, kacau hingga sebati.
Masukkan fusilli siap masak ke dalam sos krim, gaulkan hingga krim dan pasta sebati.
Hidangkan.

Krim Pasta

Hari ni ingatkan nak masak 'pasta creamy', tapi jadi x berapa creamy sebab tetiba akak menerima tetamu tatkala sos masih di atas api. Kelam kabut menyambut tetamu yang sudah berada di depan pintu, sampai terlupa nak pekatkan sos. Tapi alhamdulillah, rasanya masa boleh di terima tekak. Langkah kanan juga untuk tetamu tengahari rembang tadi... alhamdulillah.

Pasta Sos Krim
500 gm pasta (akak guna CAPELLINI - speghetti paling halus)
200 gm daging kisar
1/2 biji bawang besar - cincang
2 ulas bawang putih - cincang
5 butir cendawan butang - hiris
1/2 biji capsicum - dadu
250 ml krim (akak guna Nestle cream)
2 cawan 'chicken broth' (bahasa Melayu sebut apa tah...)
1 tsp lada putih
garam
4 sudu besar minyak zaiton
Masak pasta seperti peraturan yang tertera di paket.
Panaskan minyak zaiton, tumiskan bawang cincang hingga bawang lembut. Masukkan lada putih. Masukkan daging kisar dan cendawan. Tuangkan air, biar hingga mendidih dan tambahkan garam secukup rasa.
Masukkan capsicum dan krim, kacau hingga rata, biar mendidih sedikit, terus masukkan pasta. Gaul rata.
Hidangkan.
*** Kalau nak pekatkan sos, sebelum masukkan pasta boleh kacaukan telur atau bancuhan tepung kedalam sos.

Pasta Goreng Bawang Putih (Fried Garlic Pasta)
Akak tak tau nak bagi nama apa la dek non... nak kata olio, akak tak gunakan minyak zaiton pun. Apa2 aja la, janji rock! Eh! bukan... janji lichin... Akak memang suka buat yang sempoi, tak la terasa penat sangatkan. Dah tu, confirm habis... (hehehe... perasan cam sedap sangat la tu...)
Bukan apa, sebenarnya akak rimas la, kalau masak nasi beriya siap ngan lauk, dah la preparation makan masa, letih gak dek non... dah tu masing2 makan sikit jer. Tu pun nasi semalam masih ada dalam periuk tiada yang nak makan. Makanya, sebagai denda kat orang2 dalam rumah ni, tengahari ni ala-carte jer lah... fair kan...
Resipi yang simple, bahanpun tak banyak yang nak guna. Sesapapun boleh cuba, jangan fikir sangat bahan2 yang nak dimasukkan. Korek jer apa ada kat dapur tu humban jer la... gerenti bereh!!!
1/2 paket pasta (akak guna linguine) - rebus ikut peraturan di pek
3 ulas (15gm) bawang putih - cincang
2 sudu besar butter/majerin
7 biji cili padi - cincang
2 butir cendawan butang (optional) - cincang
3 butir buah zaiton (optional, akak bubuh sbb dah ada) - hiris
1 sudu teh oregano kering
1 sudu teh serbuk lada putih
garam
daun bawang dan daun sup - cincang halus
Cairkan majerin/butter dalam kuali 'non-stick', saute bawang putih hingga kekuningan.
Masukkan hirisan cili padi, cendawan dan buah zaiton, goreng hingga cili layu. Tambahkan garam secukup rasa, lada putih dan oregano, sebatikan.
Masukkan pasta, gaul hingga semua bahan sebati.
Gaulkan dengan hirisan daun bawang/sup, sedia untuk dihidang.
Tangkap gambar dulu baru makan ye... hehehehe...
Senangkan... kalau ada capsicum, dadukan boleh la humbankan ke dalam gorengan.

Speghetti Seafood
akak suka masak simple cam ni... kalau time kebuluran yang teramat sangat, sesuai la buat masakan cam nih...
saute garlic to tender in corn oil, add in seafood (prawn, squids), 3 colours cubed capsicums.
fold in speghetti to well-mix. Season in salt n pepper.
mentang2 lah makanan omputih, tetiba jer tergeliat lidah akak, taip resipi pun jadi omputih... hehehhehe...

Creamy Carbonara Pasta
Permintaan anak2 ni kekadang satu cabaran untuk kita mencuba sesuatu yang di luar kebiasaan kita. Along dah lama minta dibuatkan speghetti carbonara nih. Tapi akak yang tiada keyakinan nak mencubanya. Penat asyik menepis dan mencari alasan, akhirnya akak kuatkan diri untuk mencuba gak. Gini ler jadi ghopernya...
Resipi ni akak olah dari bahan2 bacaan dan jugak dari internet. Akak 'mix n match' kan mengikut keadaan dan selera tekak akak ye. Apa2 pun sesuaikan lah dengan 'availablity' bahan dalam dapur kita jugak.
Speghetti - masak ala dante mengikut arahan di pek

Resipi ni akak olah dari bahan2 bacaan dan jugak dari internet. Akak 'mix n match' kan mengikut keadaan dan selera tekak akak ye. Apa2 pun sesuaikan lah dengan 'availablity' bahan dalam dapur kita jugak.

minyak jagung (olive oil lebih baik)
bawang besar - dadu atau cincang
bawang putih - pecahkan dan cincang
sosej - hiris
cendawan - hiris (akak guna hak dlm tin)
chicken stock - akak guna stock udang sbb tu yg ada
uht cream
telur - pukul sedikit
garam
lada putih
Panaskan minyak, tumiskan bawang besar dan bawang putih hingga lembut.
Masukkan sosej hiris, goreng hingga sedikit garing, kacau gaulkan cendawan. Masak sebentar.
Tambahkan dan sebatikan stock dan krim, masak hingga mendidih. Turunkan suhu, renehkan hingga kuah pekat.
Masukkan telur, garam dan lada putih. Kacau rata dan sebati biar reneh seketika lagi sebelum campurkan speghetti atau pasta ke dalam kuah.

Speghetti Sos Putih
Along dah beberapa kali tanya camana nak buat Speghetti Carbonara. Aduhai anak... omak ko ni jawa, nek ngeliwet jangan godok yo pandey... ni mintak khazanah orang Itali, mana la nak ku tunjuk. Rasa pun tak pernah...

Google la sana sini di alam maya, tu dia pelik la ingredient - parmesan cis lah, krim lah, yoghurt la... semua tu mana nak cekau dah mak ko ni dok ghumah jer la ni... korek2 peti es jumpa la 'thicked creme' sekotak. Semalam makan ayam jilat jari tu ada tinggal 2 ketul terbiar tak ada yang ngusik. Dalam freezer jumpa burger ayam, kidnap 3 keping. Emmmm... cukup la kot...
Ok... dah boleh mula masak. Meh tengok resipi camana 'Mak Jawa' ni jadi orang Itali kejap... hehehe...

1 pek (500 gm) speghetti - masak ikut arahan yg disertakan
1 biji bawang besar - dadu
3 ulas bawang putih - ketuk dan cincang
5 biji cili api - cincang (minah ni mesti nak ada cili api, sikit pun x per asal ada rasa)
3 sudu cendawan hiris (guna yg dalam tin)
3 keping burger ayam - panggang dan dadukan
2 ketul dada ayam goreng - potong dadu kecil2
1 kotak 'thicked creme' (krim tebal?)
1 1/2 kotak air (guna kotak krim tadi)
1 sudu kecil lada sulah
1 sudu besar tepung gandum (larutkan dgn sedikit air)
sedikit mixed herbs
garam secukup rasa
minyak untuk menumis (kalau dapat minyak zaitun)
Panaskan minyak dalam kuali, tumiskan bawang besar, bawang putih dan cili api hingga naik bau.
Masukkan cendawan, hirisan burger dan hirisan ayam goreng. Gaul sebati. Masukkan lada sulah.
Masukkan krim kacau hingga semua sebati. Tambahkan air secukupnya. Biar mendidih.
Tuangkan bancuhan tepung gandum, biar hingga kuah cukup pekat. Perasakan garamnya dan tabur 'mixed herbs'.
Masukkan speghetti siap rebus kedalam kuah, kacau gaul hingga semua rata. Tutup api.
Siap untuk dihidang.
Tu dia... ala2 carbonara jer... hehehe...

My Style Speghetti Olio
This is my olio style. I serve this for lunch today. I like fast and simple preparation. My guests today, prefer simple meal too... here is Speghetti Olio my style. Sorry, I use cooking oil instead of Olive Oil... Whatever...

1 pack of speghetti - cooked ala dante
5 cloves garlic - cruched and chopped
3 pcs bird chilies - crushed
1 carrot - peeled and sliced
150 gm squids - ink removed and cut into pieces
150 gm prawns - head removed
chinese parsley - chopped
3 tblsps - cooking oil (use olive if any)
salt to taste
heat oil and saute garlic to brownish. Add in chillies and carrot, cook to tender.
add squids and prawns, stir. fold in speghetti and mix well. sprinkle salt to taste. cook until all ingredients are all blended. remove from heat.
sprinkle chopped parsley and ready to serve.

Simple Pasta - suitable for cancer patient diet
I watched a program called 'Apa Chef' hosted by Chef Wan Ismail aired on TV3. Yesterday's issue was 'Cancer Patient', part of it the patient's diet. So, the recipe here was collected from the show, very simple and easy and it's delicious.
In this recipe pasta is used as pasta is made of semolina (concern about carbo), fresh mushroom (recommended) and olive oil - actioned as anti-oxident agent which the cancer patient need most.

Any type of pasta - cooked ala dante
garlic - chopped
capsicum (red, green, yellow) - diced (i add sliced green chili as i only have red caps)
shitake mushroom - sliced (I skipped, not available)
button mushroom - sliced (I used canned mushroom)
salt to taste
olive oil (sorry, i used cooking oil)
Heat up olive oil (not so much), saute garlic, add capsicums, mushrooms stir well. Add in pasta - mix well. Season with salt to taste. Ready.

Pasta Goreng Kenduri
Penyediaan ringkas (siap bungkus) untuk kenduri tahlil dan diagihkan kepada jemaah surau dan masjid.

Pasta Goreng
4 kg pasta (makaroni, fuselli dsb..) - rebus ala dante
800 gm daging kisar
800 gm cendawan - hiris
1 kg sayur campur
1 kg bawang merah - dikisar
2 labu bawang putih - dikisar
1 inci halia - dikisar
400 gm cili kisar
200 gm sos cili
100 gm tomato puri
garam dan gula secukupnya
1 liter minyak masak
Panaskan minyak, tumiskan bahan kisar hingga naik bau dan pecah minyak.
Masukkan daging kisar, masak hingga kering air. Masukkan sayur campur dan cendawan.
Perasakan dengan garam dan gula. Renihkan hingga terbit minyak.
Masukkan pasta siap rebus dan gaul sebati hingga semua bahan bercampur mesra.

Fried Speghetti & Crunchy Bittergout
I prepared simple lunch for the family today. Only 3 of us at home as Mat Rock is outstationed and will be back later in the evening. Ok... here comes my Speghetti on my style and taste... (malay taste... you know la horr... must hot! hot! hot!) but uses very simple ingredients. hehehe... that's what I found in my fridge.

1 tbsp chili paste
1 big onion - chopped
3 cloves garlic - crushed and chopped
1/2 inch young ginger - thinly sliced
3 tbsps sliced button mushroom
1 pc carrot - grated
2 pcs fishcake - sliced
8 pcs fish ball - halved
2 tsps lemon juice
salt to taste
cooking oil (I prefer olive oil)
Heat oil in a pan. Saute garlic, onion and ginger till tender, add in chili paste. Stir well.
Add in fishcake, fishball and mushroom, stir till well covered. Add in grated carrot.
Season with salt and lemon juice then fold in Speghetti. Mix them thoroughly.
Ready to serve.

Here's another dish I prepared Crunchy Bittergout. I tried to do it base on my observation when eating in mamak's restaurant. I did ask sometimes, but never had a good answer.
2 pcs bittergout - washed and thinly sliced
3 tbsbs cornflour
1 tsp pepper
1/2 tsp salt
1 tsp curry powder
1 egg - lightly beaten
Combine all dry ingredients - cornflour, pepper, salt and curry powder.
Dip the bittergout in the beaten egg. Sprinkle with dry mixture.
Deep fry them in very hot cooking oil.

Fried Screws
hahaha... sounds 'brutal' isn't it? Just for fun only... I am no Italiano, very hard for me to remember the name of this 'screw type' pasta. Panggil skru jer la... hahahaha... My family likes pasta but need to prepare in Malaysian (that's me... :D) ways to suit the tastebuds... hot and spicy... campur itu campur ini, whats in the fridge that suit to this, all dump in. Let's layanzzzz...
500 g 'screw' pasta - boil to cook
3 tablespoons blended onion
3 teaspoons blended garlic
4 tablespoons blended chillies (lessen or more)
100 g chicken meat - cubed
1 carrot - grated coarsely
50 g cabbage - sliced
100 g fish cake - sliced
100 g fish ball - quartered
1/2 cup frozen mixed vege
1/2 lemon
salt and sugar to taste
cooking oil
chopped scallion and chinese parsley for garnishing
Heat oil in a wok. Stir fry blended ingredients till fragrant or someone sneezing...
Dump the chicken meat, bring to half cooked. Add in the fish cake, fish ball, carrot and mixed vege. Stir till well mix.
Add in the pasta and sliced cabbage. Mix them well. Add salt and sugar to taste. Squeeze the lemon juice in and mix well.
Garnish and serve.

Speghetti no Italia
Hahaha... selera Melayu memang tak sama selera Itali... mesti nak pedas... so, no italia la kan...
250g speghetti - cooked al-dante
400g minced meat
100g puree
3 tbsps blended chillies
3 tbsps tomato ketchup
1 big onion - diced
2 cloves garlic - crushed & chopped
1 stalk celery - sliced
1 carrot - cut
2 tomatoes - diced
sliced mushroom
diced capsicum
extra virgin olive oil
salt n sugar to balance the taste
Heat evoo in a pan and saute the onion, garlic and blended chillies. Add in tomato ketchup.
Add in the minced meat. Add 1 cup of water. Bring to boil or meat to half cooked.
Add in mushroom, carrot and celery. Cooked for 5 minutes. Add in the diced tomatoes and capsicum. Cook for another 3 minutes. Balance the taste that suit to your tastebud.
Serve.
