Ayam Asam Pedas

1 ekor ayam potong kecil / 1 bird chicken cut into small pieces
Cili kering - rendam & kisar / dried chilies - soak & blend
3 ulas bawang putih / 3 cloves garlic
10 butir bawang merah / 10 pcs shallots
1 inci halia / 1 in ginger
1 inci kunyit / 1 in turmeric
Garam secukup rasa / salt to taste
Perahan asam jawa / tamarind juice
Minyak untuk menumis / cooking oil for frying
Air / water

Optional ingredient

Serbuk perasa / seasoning
Serai / lemon grass
Daun kesum / malay basil

  1. Kisar bawang putih, bawang merah, halia & kunyit dan satukan dengan cili yang dah dikisar. Blend in garlic, shallots, ginger & turmeric and add in into blended chillies.
  2. Panaskan minyak secukupnya dan tumiskan semua bahan kisar tadi. Gorengkan hingga terbit minyak dan aromanya. Boleh masukkan serai jika mahu. Heat enough cooking oil in a pot and pour in blended ingredients. Fry until it brings out an aromas. Add in the lemon grass if you like.
  3. Masukkan ayam. Gaul rata hingga bumbu menyeliputi ayam tadi. Masukkan sedikit air. Biar hingga ayam setengah masak. Put the chicken in and stir until the gravy mix evenly. Pour in little bit of water. Let until the chicken half-cooked.
  4. Masukkan air asam dan garam. Tambah air jika perlu. Biarkan hingga mendidih dan ayam masak sepenuhnya. Masukkan daun kesum. Pour in the tammarind juice and salt to taste. Add in more water for thinly gravy. Let it boil and the chicken cook well. Add in the malay basil.
  5. Kecilkan api dan biarkan dia mereneh selama 20 minit. Slow down the heat and let it simmer for 20 minutes.
